  • I got the last piece of our home made haggis out last night to defrost, and we will have that this evening with mashed potato & swede, plus some veg.  Also need to get some oddments out to defrost as part of a stir fry for tomorrow - going to top it with some of the pulled pork & sauce from the other weekend to.

    We finished the fish pie (DH) and chicken casserole before both went out to separate things last night. I have some neck of lamb I intend stewing for this evening, making another hole in the freezer. I am hoping to defrost the two big outdoor ones in the next week

  • You're making great progress SL with working through stuff! My meal plan for next week will include a lamb neck curry!

    My mash last night ended up being a mix of the last of the Crown Prince Squash, the last parsnip, a chunk of the swede and a couple of potatoes, and made enough for another small-ish double portion for the freezer as well.  It was very tasty too - I do enjoy a mixed veg mash. Had peas and sweetcorn as well which saw off the last of a bag of peas - there is another in there though. 

    This evening is going to be stir fried veg and some of the pulled pork & sauce from the other week, with rice. Should be fairly straightforward to throw together this evening, and I even remembered to get one of the bags of cabbage out of the freezer to defrost too!

    Last night's dinner was Spanish meatballs - used up a pack of pork mince and 1/3 pack of posh chorizo, along with some olives, panko & grated cheese. Sauce was a tin of tomatoes with fresh spinach from this week's veg box and all was served over pasta oddments.  There are enough meatballs to do another meal on Friday - either meatballs in baps or atop mashed potatoes.

    Tonight will be an easy pickity bits meal - I'm quite under-the-weather so no effort is the best option, especially with a decreased appetite!

    What am I like!? I fell asleep in the chair for most of the afternoon and ended up having a jacket potato (the last large potato) with some salad and cheese and DH snacked on cheese and crackers, insisting he was not hungry. That might have been to do with the four shots of alcohol he had drunk while I tested my mixology skills on him!

    Joedenise it's obviously the weather for leek and potato soup, I made some this week and will have it for lunch today.

    I'm supposed to be running down the chest freezer so I can organise it better but went to Sainsbugs yesterday and they had loads of chicken legs reduced to 83p / kilo.  I have one cat who has food intolerance and when it flairs up she can only eat chicken so we get through a lot - I picked up 6 packs.  Two were cooked up last night whilst the oven was on, have stripped all the meat and will portion and freeze some.

    Also picked up 8 packs of mozzarella reduced to 29p - 7 are in the freezer and one will be used for roast veg and mozzarella past bake for dinner, using up the aubergine I have in the fridge.  Not been eating particularly well this week (OH has been poorly and has craved comfort food) so have a lot of veg to use up.

    Last night's dinner was the second portion of Spanish meatballs with cheesy mash & pan-fried spinach.  They were almost tastier the second time round if that is possible & definitely a keeper of a recipe.

    Tonight was curry night...a freezer dive yielded some leftover lamb biryani, a container of butter chicken sauce & a pack of chicken thighs.  A rummage round the fridge yielded 1/2 small onion, some cucumber, tomatoes and the last of a large yogurt pot - quick raita on the side.  Tasty & low effort and used up lots of bits that were hanging around.  We may have some fruit for dessert - there are a few tins kicking around from our lock-down stores that could do with using up.

    Time to do up a meal plan for next week which will feature more quick & easy dinners!

  • We’ve turned things on their head as thanks to having to re-make the loaf of bread we had in the machine earlier (story on my diary thread) we ran out of time to make pizza dough tonight. So cheese, crackers and pickles tonight, and the pizza will now happen tomorrow. 

    I now have a completely empty drawer in freezer 2 - and another one is close as well as just has a bag of HG runner beans in it currently. The second half of last week’s stew is out and defrosting and will do Sunday lunch tomorrow - I’ll do dumplings again I think. 

    There will be some stuff to go in there from today’s farmers market purchases - a pack of mince and one of diced beef which both need splitting in half, a couple of packs of lamb sausages, and a pack of pork belly slices. We also bought some bits for lunches - which will each get the first portion used out of them before MrEH splits the rest up and freezes. Probably a pack of bacon too, and there is also a pack of sausage meat in freezer 1 now ready for Christmas. We do now have a plan to try to get freezer 2 empty, defrosted and off this side of Christmas though - so watch this space!

    Defrosted the chest freezer with assistance from DH holding balanced crates while I got everything out. I think I miight have to make some cassis as I have three bags of blackcurrants and already have jelly and cordial.

    In the meantime I defrosted 4 very frosty looking sausages which I will make a mini toad with (I might remove the skins and make my squashed toad instead, with onions and herbs) and last night we had chuck steak burgers (bought, not made) with oven chips and salad. 6oz burger is too much for me. Note to self for purchases in future

  • Morning all.  Went away for the weekend and left DH to fend for himself so we still have lots of veggies to use up in the fridge 😂

    Had a bacon sandwich for breakfast so that's gone and then lunch today will probably be a quick veggie soup to get some of it gone, while dinner is going to be stir fry and noodles so I can use up some black bean paste and a couple of chicken thighs I found in the freezer.  Have planned a very freezer heavy week of meals so a) we don't need to buy much and b) we can make space for the Christmas stuff I'm going to start picking up.
