Not much meal planning from me today as we’re away for the weekend heading off as soon as MrEH finishes work. I have just made cinnamon porridge for us both though - his topped with the last banana and mine with the spare apple, both caramelised in a little maple syrup and apple juice. That’s the maple syrup finished so will add a new bottle to the Al’s list - we use it a reasonable amount.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

Veg box is here and contains yet another cabbage! So this weekend I will be making something with cabbage.
Lunch today will be tomato soup to use up some on their way out tomatoes.
Dinner will be calzone to use up some opened pepperoni and bacon for OH and the rest of my lentil bolognaise. We got a free gift in the veg box which was three different cheeses so some of that will go in and have taken some mozzarella out of the freezer along. Will serve with some crispy potato slices (out the freezer) and some part based sour dough baguettes with garlic butter.2 -
We will be getting our veg box delivery again next week, after a two month break while we moved & got settled! Thank goodness it's just plain everyday veg this time, so will fit nicely into our (hopefully) simple meal plan. Have reduced our box delivery to every other week, as delivery costs have doubled. We'll also be able to top up with the weekly grocery delivery if we ever run out. Somehow I always remember struggling with how huge the veg are at this time of year, so we should be OK with that plan.
Yesterday was a late lunch of a store-bought sandwich & fastfood chicken and chips for dinner. My only excuse is that I'm doing crazy overtime atm, working on aspects of 'that' conference up north and real life is a bit on the back burner! Today will be sausages in rolls with some onions & salad - nice and easy dinner with very little effort! Thank goodness for WFH Fridays4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! @CCW007 tyvm for the lentil bolognese recipe. And @EssexHebridean tyvm for the idea of caramelised apples on porridge. Unfortunately I find the only oats I have are the kind that dissolve into mush, not the jumbo kind I usually buy. So the fruit really helps, and did need eating up. Running on the fumes of October’s grocery budget atm, so all these things help!3

Made a batch of bottom of the fridge veg curry with chickpeas for the freezer as well as some broth / soup using up soup mix. Soup will need something more when I come to use it but it's fine as a base.
6 peppers chopped and frozen - enough space in the fridge for the veg box haul.
Made a very random veggie braised cabbage / colcannon type affair for lunch using some "this isn't bacon" coming up to its UB date, onion, cabbage and potato cooked in veg stock - was actually pretty tasty!
Tomorrow will be roast - YS lamb for OH and something from the freezer for me with purple cauli, broccoli, roasties and parsnips. Will also be pickling more courgettes tomorrow as well, time permitting.4 -
I've got the meat out to make chilli and a chicken to roast, in an effort to make room in the freezer. Then I went and had egg on toast this evening instead of eating more. Living on a Narrowboat with not much storage for food, we have a fridge but no freezer. Still using up packet and tinned food that we bought with us when we moved out of our house. Lots of rice being eaten. Today was sausages cooked in a egg fried rice with sweetcorn, only the sausages were brought today
Tomorrow is chicken in a jar of sauce that was in the cupboard but we brought broccoli and carrots. Potatoes with it not rice.
Sorry not been about for a while. Sold our house. Mortgage free. Brought a motorhome to live in first. Found the narrowboat of our dreams and moved in 4 weeks later. Motorhome up for sale now.
Will still carry on eating what's in the cupboards and left overs. Internet is a bit hit and miss. Will call in when I can xMortgage free September 2021. Narrowboat brought October 2021
