Love all the prepping talk. I made 3 double portions of braised red cabbage with the leftovers from dinner on Monday which are now all sitting in the freezer to be added to any number of dinners.
Dinner tonight is chicken thighs from the freezer baked in the oven with a kind of risotto, using rice we had in, a lonely courgette from the fridge and some leeks I picked up at the weekend.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20175 -

We had chicken salad last night, with DH having a jacket potato with his (He didn't need it but it's that sort of weather). Tonight will be leftovers with freezer surprise - probably curry and stew. As long as they both go. I also have the chicken carcass to pick and may make a very small chicken curry with spinach to top up - my favourite leftovers with chicken is pie but no pastry for me at the moment.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

OH will be making toad-in-hole tonight for dinner - last of the cumberlands from the freezer, last uht milk from the cupboard, and a mix of plain and white spelt flour for the batter. Probably some peppers and onions on the side, and steamed brussels all from last week's veg box.
I've been contemplating switching from our bi-weekly shop to a tri-weekly shop as the freezer tetris will be a lot less of a challenge - something in me still feels most comfortable when it's packed to the gills though - LOL4 YEARS 10 MONTHS DEBT FREE!!! Not much reverse planning today! Have some leeks to use up so going to make a big batch of leek and barley soup. Should be plenty to freeze some for another couple of meals for DH and I.

We had freezer surprise (turned out to be chilli) with veg curry and beef stew left-overs yesterday - an eclectic but rather yummy mixture that should no-way have worked! - you know that thing in your fridge where it's been taken over by bitsa; bitsa this, bitsa that - well that's my fridge. I blame the outdoor fridge freezer being on its last legs - desperately limping on until SundaySave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Tonight we're having a salmon traybake to use up the lonely veg in the fridge - in this case it's a courgette, a leek and a pepper, topped up with a couple of potatoes.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173
