Best regards OshPlease note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

Hello there,
I've done a bit of googling and it looks like this retail park is managed by a company called Land Securities or 'LandSec'. This is the email for their CEO:
robertnoel@landsecurities.com
What you need to do today (apart from to hunker down, have a cup of tea and not worry!) is to email him explaining what happened and requesting that he cancel the PCN.
At the same time, email the manager of Currys:
Alexander.baldock@dixonscarphone.com
(I'm surprised to see a capital 'A' at the beginning of that email address, so try a small 'a' if you get a message saying it has failed.)
We'll allow you a second cup of tea, perhaps even a biscuit, if you also phone Currys and ask to speak to their manager. NOT customer services - THE MANAGER. Or ask for their email address - I haven't been able to find it so far. If he or she says that Currys do not own the car park, please ask who that landowner is. They will know. And it it's not Landsec, if I've got that wrong, ask for the landowner's CEO's email address.
Please really pile it on! But use some paragraphs and make it easy to read - try not to jumble things up. Do not on any account apologise. Actually say, 'I must strongly request that you cancel this extremely unfair Parking Charge Notice'.
Give it a go. Come straight back if any problems.4 -
I recently threatened PCWorld with SSC, Eventually they stumped up £75 in compo. If it had not been for corono virus I would have taken them to court for double that. You never know how far you can go until you go too far.1

Email addresses are not case sensitive.
A capital 'A' should work equally as well as a lower case 'a'.

'On (date) we parked at Riverside Retail Park in Chesterfield.'
(When emailing Curry's continue with 'to shop at Curry's' and add details of anything you bought. If emailing the landowner carry on with .... 'and went shopping in Curry's and x shops.....).
Then say what happened ....'We parked in a disabled bay with my disabled badge on the dash. When we got back we found that the disabled badge had fallen onto the floor. This must have happened as we shut the doors.'
Then say when you received the Parking Charge Notice, that it was from UKCPS and that 'it was for parking in a disabled bay and not displaying a badge.'
Say when the Registered Keeper appealed to UKCPS and when the appeal was rejected.
Then give a whole paragraph, 2 if necessary, to a list of the disabilities you have.
You could add something about the Equalities Act 2010. E.g. 'Due to my disabilities I am protected by the Equalities Act 2010 and understand that I actually have the right to park in a disabled bay at a retail park even without displaying the badge. However, as stated, every attempt was made to display the badge.'
Then say something like: 'This is an extremely unfair parking charge. We were genuine customers and were parked correctly. I sent UKCPS a copy of my disabled badge with the appeal to them, but they have taken no notice whatsoever and continue to demand money. We do not have any money to spare. I must request that you cancel this charge which is causing us considerable worry and having a bad effect on my already poor health.'3
