Alternative pancake recipes needed please

Pancake day tomorrow 
I love pancakes but quite happy being a squeeze of lemon and sugar girl if I'm on my own, just getting fancier if the grown up children are calling in, usually stretch to blueberry stack. My friend and her grandchildren are also here for tea tomorrow, so a full house and I've just realised basic isn't going to cut it!
My son was diagnosed as lactose intolerant last year, son in law is vegan, friend's husband is diabetic, so I'm after ideas for tasty alternative pancake recipes, maybe even savoury too?
Also the grandchildren are fussy eaters, they get plenty of veg hidden in meals, not so much fruit though, is there a way of hiding fruit in pancakes? maybe in the batter??
as an afterthought my other son is a chef and I do like to try and impress now and again
so any funky/healthy ideas welcome too

banana pancakes, a WW stalwartcan't help with the vegan ones...but a google search will....

For the basic traditional British pancake, I use this vegan recipe (I use oat milk as that's what we drink). It's vegan and lactose free with no added sugar so should suit everybody.

I use this recipe for a vegan American style pancake:

It's very fluffy due to the huge quantity of baking powder (I can't taste it but perhaps do a small practice run to check you're happy with it). You can add fruit or whatever you like.
For the kids, I wouldn't go fancy. Lemon and sugar or Nutella, strawberries and banana always go down a treat! You can get vegan choc spread in most supermarkets. We like Nature's Store brand, but it has a may contain warning for milk. Sweet Freedom chocolate pot is milk free and gets the sweetness from fruit (it's nowhere near as sweet as 'normal' stuff).4 -
