After a few postponements and the court sending me papers for a totally unrelated case I have a telephone hearing at the beginning of September. Will update on result. I'm pretty confident as my case is for stopping at the pedestrian crossing and the passenger got out while I was stopped.2 -

SUCCESS! Apologies for the late update but we won our telephone hearing on the basis that VCS's claim stated that the PCN was issued as soon as the vehicle stopped (at the zebra crossing) and the judge rightly agreed that the driver was obliged to stop. They tried to argue that the vehicle stopped prior to there being a pedestrian on the crossing (which it didn't), despite there being no photographic evidence supporting their claim.
VCS asked for permission to appeal but were given short shrift by the judge and permission to appeal was refused.
A satisfying end to a long saga ! Good luck everyone else8 -
