Another nice one to do is beetroot & onion using those vac packs of ready cooked beetroot. Heat vinegar, sugar and water in a pan (ratio of 4:2:4) along with a small dollop of mustard, cool and pour over. I use balsamic vinegar for this but imagine malt or white vinegar would work too.
Ooh going to try this... end of the month and a bit broke but I do have beetroot packs and left over vinegar from a jar of pickled onions. Should make a change. Thanks :T

I made some cheese, potato and chive pinwheels at the weekend to use up some leftover pastry, I made way too much cheese, potato and chive mixture so DH and I had them fried like potato cakes yesterday with some scrambled eggs for lunch – yum! I also made some toasted garlic breadcrumbs to use up some bread and had them sprinkled over a tomato risotto last night, it was delicious.
Today I used up a tin of butter beans with a BB date of November 2019 in a leek and butter bean soup, I’m planning to have it Friday lunchtime as we have other food to use up before then, it seemed to taste nice when I tried a bit after making it so fingers crossed it’ll be a yum Friday lunch.2 -
princesskitty29 Tinned stuff keeps indefinitely you do not need to rush to use up by the BB date. Dating on tins was compulsory, not by the EU but the Conservative Government. They did not allow a long date. A couple of years ago the Government said that dates on food was for the retailers not consumers. Lies of course because the law says for consumers. They will still be edible in 100 years.
My daughter throws them out and I get very annoyed. The soup sounds very nice, butter beans are nice in tomato soup too.2 -
I've found portion control a great help in saving money and food.
I kept a load of old Liberte plastic yoghurt pots (I only get them when they are super-cheap in Fultons lol) - the big 500ml ones - and they are great for storing stuff in. Bonus, they stack up and they are clear so you can see what's in them. I store them at eye level (move your fridge shelves about) - and now that has become the shelf of use-it-first.
I prep a tub of - say broccoli or cauli - broke up in bits, sliced carrots. onions whatever will make for a healthy meal and tub them up individually. If it's there it will get used - and you can just take a bit of this or that. It saves waste and time (after you've prepped a batch in the first place).
I've started to put a tub of frozen peas (which defrosts of course) in the fridge so you can just add a couple of spoonfuls - instead of the shed-load that pours out of the original packet. A bag of peas lasts twice as long this way.
Half a tin of beans/soup does me - so I get 2 portions from a tin instead of 1 and the rest that I eat but don't want! Bonus - no more guilt-induced freezer clutter.
Finally - who knew - that 2 or 4 slice toaster? You can just put 1 slice in it lol2022 | Back to the fold - need a Money Saving mojo reboot!

It depends on how thickly (or thinly) you slice everything. Mine are fairly thin and take about 4/5 days. But they do stay crispy for a good while. Enjoy
Last night's salad was very enjoyable, a refreshing change from all the festive stodgy stuff.
Tonight we're having chicken, bacon & leek (all from the freezer) in a creamy sauce, the last of the swede from the box in the fridge and mash. Afters will be caramelized banana slices; there's only one banana left - it needs using up and I don't want to make banana bread (again), much as I like it!
More crossed off the freezer use-it-up list - 2 savoury flapjacks. By 'eck, it's taking some time but I'm getting there!Be kind to others and to yourself too.3 -

I am being much more conscious as money is short until payday. Excess of peas from yesterday were added to today’s curry.

I ran out of carrots yesterday and decided to slice up my celery as a substitute (I usually stick it in couscous salads or soup). I thought it might not be that enjoyable but I was surprised that I enjoyed it just as much as my carrots. 3 big stalks yesterday, 4 medium ones today and I've just chopped up the remaining small stalks for tomorrow's munchie moment.
I couldn't bring myself to eat the leaves though, I suppose I could in a salad but am so used to throwing them away. However I kept the root and have stuck it in a glass of water for it to grow again.Value-for-money-for-me-puhleeze!
