using up 'christmas' cheese ..

for a family party, and as part of a lovely hamper from a friend, I appear to have a glut of Christmassy cheeses .. you know the kind, the rounds of cheddar that are flavoured, mainly with fruit.
any ideas on ways to use them up? I have had cheese and crackers for lunch at work this past week, and to be honest im all cheesed out lol ... short of putting them with veg in a pasty, im at a loss as to what to do with them. im reluctant to put them in the freezer as im trying to use up my freezer contents but will have to if I cant find a use for them!!
any suggestions gratefully received!!

    If they're still wrapped they should last a while in the fridge. Would these work in cheese scones?

    Ah.
    Friends, I too have a problem. I buy too much cheese.
    If you've been down the cracker route, then might I suggest getting some pre-made puff pastry and putting together some little tartlets ? Of course pre made isn't very MSE (or old style for that matter) but it does the job. Something like tomato, baby leek, asparagus would all work. If you want to lose the fruit, just crumble it and remove the bits.

    Pizza ?

    And of course there are cheese toasties. But tartlets are good for a gentle sprinkling rather than a full on cheese fest

  • If they are the waxed sort and haven't yet been opened, then you can freeze them and eat them later on in the year

    I wish I had this problem! I normally get quite lucky with post-Crimbo bargain cheese, not this year though.
    And if you get mold, just cut the affected areas off and re-wrap with fresh film/wax paper/parchment/whatever
    Or use the Tesco method: cut away the mould and put the block back down in the deli counter.

  • Cheese actually goes well in soups - I made a very nice parsnip and blue cheese soup the other day, and there's a recipe kicking about somewhere on the forum for slowcooker beef plus port plus stilton which seems like a good crimbo use-up.

    I second toasties/ cheese on toast - particularly good with a layer of hoi-sin under the cheese, and I think that would work well with cheese with fruit in.

    Half a cooked chicken breast (or a bit less) with some wensleydale wrapped in puff pastry is nice. i would imgine it would work quite nicely with something like wensleydale and apricot or wensleydale and cranberry as well.



    Definately they would also work in tartlets. Also even if not wrapped you can freeze the cheese. i never thing its quite as good for eating but would be fine cooked.

    Then you can just take out what you need
