Ignore the fruits, they'll just add a different zing but I just grate up all the bits and bobs, mix with a spoon of Dijon mustard, a big spoon full of mayo and mix well, spread that on a slice of toast and pop back under the grill. Always scrummy and can be served on its own or as a nice dunking partner to soup, baked beans or with a poached egg.
  • I wish we had left over cheese to sue up...I'm sure I have mice of the large 6ft variety!!

When I have cheese ( of any kind!) I make chicken wraps, slice into a chicken breast small slits into it and cheese - any will do, either add sliced tomatoes or if using brie ( or similar, Cranberry jam would be good then wrap each chicken breast up with some bacon and put in the oven till melted and cooked through. Delish with salad and tatties! These freeze really well too!

Another recipe I do with be large mushrooms is cheese and breadcrumbs - cheap and cheerful bake, put onion, ,cheese ( any sort will do), a wee bit of garlic, herbs and breadcrumbs into a bowl and mix together , put into the large mushrooms and bake! Hope this helps!

I always use old cheese in pasta bake, especially Stilton - it really adds some cheesy punch. My wife doesn't like any blue cheese as a rule but likes Stilton when it's baked.
  • My partner once got rather over-excited at a cheese festival, resulting in the purchase of 19 different blocks. Properly wrapped it keeps for ages in the fridge.

The humble jacket spud with cheese n beans is an under-rated meal.
    They are an EYESORES!!!!
