Grate cheese into home made coleslaw (or shop bought).
Use variety of cheese on home made pizza. The fruity bits might make a nice addition.
Quiche or mini quiches.
Add to dips either grated for harder cheese, or mashed in for soft cheese/blue cheese.0 -
...or a make frittata (I generally can't stand quiche, but can put up with frittata)

Brocolli and cauliflower are both awesome with all sorts of cheese. We're in the same boat with using things up!0

Ignore the fruits, they'll just add a different zing but I just grate up all the bits and bobs, mix with a spoon of Dijon mustard, a big spoon full of mayo and mix well, spread that on a slice of toast and pop back under the grill. Always scrummy and can be served on its own or as a nice dunking partner to soup, baked beans or with a poached egg.0

For me it's the white from a boiled egg. It took around 45 years for me to enjoy eating all of a fried egg, and even now the white still has to be a bit crispy
