The best way I have found of doing this for free is to import the .pdf into Google Docs (free online) then save it in MS Word format. The conversion may not be perfect in terms of formatting but you do at least get editable text.0 -
As from Word 2013 you can open PDF files directly in Word, so unless you're using an older version of Word that would be your easiest method.0

If PDF does not contain personal information use https://www.zamzar.com/convert/pdf-to-Word/0

Doesn't work for me, either spreads one page of text over several pages or over writes the text.

They will vary. A pdf is, in some ways, closer to being an image rather than a page of text. So, any of the converters are doing a similar job to scanning a printed page then using OCR to turn it into editable text.
Although my suggestion of using Google docs works reasonably well in most cases (and it is what I used occasionally) I had not realised that later versions of MS Word will now do it! I have just converted a ten page set of accounts from pdf to Word using Office 365. It is better than Google docs managed (which wasn't bad by any means) but the formatting etc is still not perfect.0 -

Having used the one in my post #5, it appears to have done it successfully.

Simply convert your PDF file to Ms Doc online and then copy the text you want.0
