https://github.com/Sycnex/Windows10Debloater seems to be where the OP has found the script that ripped his Mail out - the entry "Windows communications apps" seems to remove Mail but its understandable to an extent that that the OP wouldn't have been aware that it would remove Mail, after all it doesn't have an obvious name like "mail".
The script doesn't actually do anything you can't do yourself but has proved the point about unintended consequences of running scripts when you don't understand what they do.0 -

A lot it took some time - I have now also clicked revert registry changes in that program and that put a lot of back.
Presumably it is OK to use that program if I read it properly and make sure by using the check boxes that is what should be removed/0 -
No. If you want to uninstall apps use the uninstall function in the Windows settings. Then you know exactly what you are removing. Windows 10 really isn't full of 'bloat'. The disk space you will have gained will be minimal compared to size of a hard disk so not worth it for that reason. Any of the installed programmes it removes that you don't use won't be running and won't be using up system resources. The best way to manage Windows is to leave it alone generally and keep it updated.
Running 'debloaters' and registry cleaners is just asking for unintended results that cause problems.0 -
In any event when you upgrade to the next Windows build (1903 to 19H2 or whatever it'll be called) half the "bloat" you've just uninstalled will be replaced anyway. So you might as well just remove the icons from the Start Menu and leave it at that - out of sight out of mind.0
