I want to lengthen the cable to my air fryer, it only needs to be another 6 inces or so, is there a simple way?

Simple? no. extension cord or take apart and change existing lead for longer one if it doesn't have security screws!0

If it’s securely attached at each end then heating and stretching it could work.
Failing that, no.0 -

Yes, it's called 'asking somebody who knows what they are doing to put a new cable on'.0

Given it only needs to be plugged in while in use, could a short extension lead not be the easiest fix here?

Personally, I don't think that an extension lead would be suitable as it would probably mean that it would be on a worktop and there's the possibility of it getting wet, especially if it's being used near to a sink or hob.
I would suggest that you go with whitegoods_engineer's advice and take the fryer along to someone who can safely replace the cable with a longer one of the correct specification.0 -

OP, have you a child who could hold it up near the socket while it's frying?0 -
Finding, training, & monitoring the growth of said child is a chore (been there, washed those T shirts).
Honestly, you may as well shallow fry at a comfortable height.0
