I use burger relish when there is no salsa - bit sweeter so the kids might prefer them

I would mix mozarella with a little cheddar or red leicester to add more taste and colour but that's just my personal preference.

Well, it was my daughters birthday today and i did the cheesy nachos...they went down a treat....thank you everyone for our help0

I bought 2 packets of value doritos from tesco and used mild salsa sauce (also from Tesco) and spread over the top of doritos I then put a packet of grated mozzerella cheese over and melted the cheese under the grill.
It wasn't really homemade but it tasted lovely and was a really quick snack while my home made pizza was cooking.
Now....how to make a mild salsa sauce from scratch...any ideas? I have never ever used a chilli so full instructions are needed.

re the chili - I tend to use mild store brand chili powder as its less violent for my pallate!
I would blitz with a stick blender, tinned tomatoes minus the extra juice, if you are really good you could cut the toms first and deseed. add a bit of chopped onion, maybe some garlic, the afore mentioned chili powder and a bit of paprika.
to really get the flavours going you might want to warm the whole lot through and then leave to cool but its fine just as it is an chilled.
you can add other stuff if you like more taste and texture. things like garlic, green peppers
if you want to use real chilli pepper make sure you really wash your hands well afterwards and any tools used like knife or chopping board. I would also advise deseeding the chili pod and dont use the really small ones - stick with a "normal" mild one to start. red or green makes little difference but the seeds and the size seem to!
