Update -

So the landowner took copies of the ticket and the demand for payment letters and said he will do his best to get the fine rescinded for me, if not he'll get it reduced back to the original £60 at a minimum.

Fingers crossed, seems it's always a good idea to speak to the land owner / land manager as if they're a generally decent person they'll realise £160 for a moped taking up about the same space as a pushbike as a one-off is obscene.
