I made a batch of muffins today using this recipe and they turned out an absolute treat. I added zest and juice of two lemons, two tsp of honey and some sultanas/raisins and they are light, fluffy and truly yummy. Many thanks SavingSara for such a great recipe!

I made Delia's English muffins on xmas eve and we had them toasted with crispy smoked bacon and scrambled eggs for xmas day brekkie......they were divine!! Mum has decided that its a new family tradition and I have to make them every year!!! I had a leftover one this morning topped with fried bacon bits& mushrooms & grated cheese melted under the gril.
Just a tip though....if you decide to make them, the online recipe lists 2oz of lard but doesn't say when to add it. Having trawled through my recipe books I found a similar recipe that said to rub the lard into the flour before adding the milk/yeast mixture.0 -

[FONT="]220 ml milk 250g cheddar cheese[/FONT]
[FONT="]1 teaspoon cayenne pepper 1 egg[/FONT]
[FONT="]130 g baby spinach leaves[/FONT]

[FONT="]Preheat oven to 170C/ gas 3. Melt butter then fry onion until cooked. Set aside. Put flour baking powder cayenne and cheese into bowl. [/FONT]
[FONT="]In separate bowl mix milk and egg together then slowly pour into flour mixture and beat with handheld electric whisk until all ingredients well mixed.[/FONT]
[FONT="]Stir in onion and spinach with wooden spoon until evenly dispersed.[/FONT]
[FONT="]Spoon into paper cases until 2/3 rds full and bake for 30-35 minutes.[/FONT]
Taken from hummingbird bakery book -- I did them as mini muffins so cooked them for 25 mins instead. They were a big hit. Used mature cheddar - tasty and I'm not a fan of strong cheese.

Tooooooo much choice on-line has anyone got a yummy reliable recipe? I've got a cheap chocolate bar, green and blacks drinking chocolate (if that's any use) coco powder and the usual store cupboard items.
I do prefer oil to butter though x0 -
Here you go...
275g SR Flour
25g cocoa
150g sugar
1egg
125ml oil
175ml milk
Roughly mix all ingredients but leave a little bit lumpy. To make double choc muffins bash up some chocolate and stir in as well. Bake on 200c for 20 mins or until a skewer comes out clean. You can also use plain flour and baking powder. Makes about 12 muffinsLess is more0 -

I have just made some banana & nut muffins to use up some very overripe bananas and they have come out of the oven like rubber on the outside.
What have I done wrong? Have I overcooked them? (they were actually a bit brown when I took them out - but not burnt).
Used a recipe that added the wet to dry ingredients - but not one I have used before.0 -
