If evidence was needed it the employer will have it. Their systems should show the names of people who were under search, the cousin will have no evidence of why she was searching your name.

Edit to add: This has reminded me of my first job over 20 years ago. We had access to a database with everyone’s national insurance records. Every month you’d be given a random selection of your searches and you’d have to explain why each one was justified. Someone got the sack for looking up the records of various celebrities including Elton John.0 -
Check all 3 credit files, if you were searched by her cousin it'll be in the search section of one of them.0

You need to decide what outcome you want before embarking on any course of action.
If true then the search will be recorded on one or more of the three CRAs reports.
If it does appear then the finance company will know who carried out the search. All searches will be recorded, and logged against an individual user.
Your ex's cousin if she has carried out the search will have committed at least two serious offences, a Computer Misuse offence, and Data Protection Offence. Either will most likely end in her dismissal from work, and possible a criminal record.0 -
If you know the name of her employer you need to be writing to their Data Protection Officer. If her cousin has done it once there is a likelihood she's done it before and/or would be willing to do it again and people like that shouldn't be working in positions that they are.

So no proof at all? a verbal from your Ex?
As others have said check ALL your credit files for recent searches.
And also contact the cousins company and ask them to investigate.

Good Afternoon.
My ex has a cousin who works for a high-end finance company as an underwriter, and I have proof that she asked her to search for me and my details through her company.
She has given her information including my address, my work address, my salary, even what car finance I have on my car. My credit score, how many credit lines I have open, along with other details.
Now I've ask people whether this is legal or not and I've been told by several people this is against the law.
So any advice on what I should do on this matter will be very helpful, thank you!
Your work address and salary are NOT shown on your credit files but are presumably already known to your ex.
Your credit score is certainly NOT shown on your credit files and would be seen by a lender so if she has told you your credit score as seen by you this information did NOT come from a lenders credit search.0 -
