..I have a 3 mobile phone at the moment, but for christmas, my other half is buying me a new Sony Ericsson W580i, which is unlocked. Would i still be able to use my 3 chip in this phone? I have no clue

It will work, but 3 won't like it (they only allow 3g handets for their SIMs).
They will warn you to stop using it, and will cut you off if you continue.0 -

Yes.
When you use their backup service on 2g (orange), orange invoice them for the calls. They identify the calls that have been routed over their system and the id of the handsets used.0 -
Interesting. What's the Orange back-up service? I always mix and match phoens and sims but haven't used 3. Presumably the back-up service is slightly different since I've never had a problem switching handsets on Orange?0

It is an arrangement 3 have with Orange for occasions when a 3 call is attempted in an area where their coverage is poor. The call is carried via the Orange network (ie on 2g).0
