Switching sim-only and notice period

I have a 30 day notice contract - planning to change provider, however some of the offers I have seen are "offer available for next 5 days etc." and I remember when I last switched from I had to give notice but the changeover happened before that expired so had to pay EE for some time that I didn't use the product.
As an example:
Existing contract - needs 30 days notice
New offer - only available for next 10 days
So sign up to new offer and it ports the number 5 days later
For the remaining 15 days you are paying for both contracts
Is it just a matter of trying to give notice so that your 30 days expires around when you plan to change and hope there are still offers on/accept you might have to pay for 2 packages for a while or is there some technique to this to avoid crossover?

Not rocket science. Take out the new contract and pay for the overlap.0

From what I've seen, you either pay the overlap, or time it right with your notice period. I thought I'd missed out on a decent plusnet sim-only offer, but a better one (for me) came along a couple of weeks later so I reduced the overlap costs. I'm sure you'll find an offer when you need one0
