Same as everyone posting about a case here!  Spot those who have done it before (none).  Of course other new posters writing their WS & evidence haven't come across this before - they are all like you.

I don't understand how you are struggling to do a WS and evidence - it is the easiest stage.  Your story and your evidence photos and cases.  People post theirs EVERY DAY here.

Copy one and get off your phone if that's the issue.

What's wrong with the examples in the NEWBIES thread where it tells you about WS stage with linked examples?

I'm confused about my defense vs my witness statement. In my defence I added...
"There will be no admissions as to who was driving and no assumptions can be drawn,"
But if I argue the signage etc, am I not admitting I was driving?

No.  Everyone talks about signage and many are registered keepers, not drivers.

Or, admit to being the driver and crack on with a WS in that vein about the real story of what happened and how rubbish the signs are; might make it easier for you now and at the hearing.  Often there is no benefit pretending not to be the driver at WS stage, if you were.  Does that help focus your mind on how to write this and present yourself at the hearing as an honest witness?

See the NEWBIES thread for example WS, and you also need a Summary Costs Assessment (your costs so far) and a copy of the Southampton approved judgement (last 6 pages only, of the Britannia v Crosby case I posted for everyone to use, just last night).  Plus your other evidence, photos of signs, whatever you intend to use.

A little bit of initiative is required from time to time.

Can you perhaps imagine the keeper visiting the car park himself to satisfy himself on the state of the signs?

How would you recommend adding the transcript to the witness statement, what would be the correct method?

Why would that preclude you from being a passenger?  Or what Kith says?
