NTC - Court Claim by BW Legal

Hi All
January of this year I received a PCN from NTC (Norwich Traffic Control) who are IPC registered. Have now received a court claim from BW Legal so, as per sticky, am creating a thread.
Unfortunately this hasn't been handled as per MSE recommendations up to now so not sure how to approach this.
Background:
Having been away with family over the christmas period, I dropped my mum off outside her flat on an NTC controlled road (she has no parking). As we'd been away for about a week she had quite a lot of stuff to carry back up to her flat so I helped her with it - I was gone for perhaps 10 minutes and would argue I was loading rather than parked... but anyway, came back, PCN on window.
Sadly I didn't have the presence of mind to take any pictures as evidence as I had been driving for 5 hours and was tired and hungry. My mum then appealed on my behalf via NTC's appeals process (I told her not to bother but she did anyway, she was outraged), the appeal wasn't based off the MSE template and was obviously rejected. I've ignored all correspondence since but now have this court claim.
Factoring in the non-standard appeal, the lack of evidence and the circumstances of the ticket, what should I do? I think from time of writing I have 14 days to respond. I'm writing this at work but can supply any missing detail once I get home.
