We went in January (my birthday). Booked a return flight to Miami with Virgin. A hire car with Alamo and then one night hotel (near to the Everglades).
Accommodation is plentiful in the US and so never an issue to find a place. Orlando is never ever full anyway. That way you can go where the feeling takes you.

We have done Disney, well Orlando, from where you can visit lots of places as well as the parks. We always stay in Universal hotels there to get front of line access.
We then went down to the gulf coast. On various visits, we have stayed on Captiva and Sanibel which are white sand barrier islands, Marco Island, Anna Maria Island, and from there you can visit the Everglades, or even Key West from Fort Myers by boat. On the Gulf, we stay in villas.
We have always booked every element separately and ourselves. The DIBB is a great resource.0 -

Don't forget the other coast. Miami, Cape Canaveral, St Augustine, Daytona Beach...Tall, dark & handsome. Well two out of three ain't bad.0

We did an Orlando two Centre which we booked everything ourselves on our first and only visit. It really wasn't difficult.
Flights were booked direct with the airline. We wanted to do Disney first so we booked an accommodation and ticket package with Disney, so they transferred us from the airport too. At the end of that section, we collected a hirecar, booked directly through the carhire company, at Disney to drive to an apartment we booked as part of a Universal package. We used that as our base for travelling to other destinations such as Discovery Cove, Kennedy Space Centre aS well as Universal, then dropped off the hirecar at the airport.
I compared the pricing to alternative options and given what we wanted to do and the flexibility it afforded us, it was cost effective.
Thedibb forums were a huge source of information and I'd definitely recommend spending time there.0
