Parking Eye - Swamped and bewildered!

Hi all,
I wondered if someone can please help me with a Parking Charge Notice I've recieved. I am really not very good at these things, all the words make my brain shut down and I get super anxious. I ususally just pay this sort of thing but £100 is going to kill me. I'm ashamed to admit I've hidden from this for a bit but it's nearly at the appeal deadline and I'm trying to face it.
I've tried to read the things for newbies and other examples of parking appeals and advice on other websites like the parking cowboy one but I just don't know where to start and there's so much information to take in. Please can someone help me? Details of my PCN below.
I recieved a PCN from Parking Eye after staying at a Hopwood Park service station. It says I stayed for 2hrs and 35mins. I didn't realise there was a time limit. The reason we were there is because I was meeting my mum and dad. They had taken my kids out for the day and were due to meet us earlier but were delayed because my Mum is terminally ill and they're super slow all the time getting anywhere. I just waited at the services without thinking about the fact that there might be a parking time deadline.
The date that I have to make payment by is 3/10/18.
Where do I start and what do I do?

Have you read the Newbies thread that specifically answers your questions and gives you a template to use?

You need to take this step by step and as IamEmanresu says

You must get your appeal in quickly
That is step one and then we await the reply from PE which
you will come back here
You need to understand some facts as well ...
1: The BPA code of practice states that there is a grace
period ... 10 minutes entering the car park and 10 minutes
for leaving. This means that PE is trying to extort money
from you for overstaying by 15 minutes
2: PE use ANPR, hence you got a ticket in the post.
ANPR is not reliable as exposed by BBC watchdog and
confirmed by the BPA

3: Go back to the car park and take pictures of the signs
and location based on the motorist entering the car park
Then upload them to a free site and show the link here
starting with hxxp, not http and we will convert it for you

Beamer... the grace period is 10 minutes but that is just a rule of thumb as there can be many reasons why 10 minutes is not enough. The poster needs to be able to articulate the reasons why 10 mins was insufficient such as children or a very busy site during the school holidays.
In addition the quickest way to get a ParkingEye ticket cancelled is to get the site to cancel it. Phone the services and ask to talk to the person that looks after parking and tell them about the minor overstay. Come back when you have talked to them.

yet another case for an MP's involvement .....
if the service station do not cancel then consider an approach to the local press ... I am sure that they would run a story under the circumstances that you have outlined .....
please remember that you must carry on with the good advice that you have been give ... and the above is only an extra ...

Right now, it has a dodgy link (hopefully soon to be removed) and you mentioning the site might make newbies click on it and think it is an option. IT IS NOT.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
