I’ve put it in a tin with foil and shall let it mature for a few days. I’ll serve it with a treacle toffee sauce to make it a proper treat.
    It’s traditionally eaten on bonfire night so I shall have to make some more in preparation for that :D

    Brambling, I have 'borrowed' your malt loaf recipe, sounds lush...

    Today I am making a basque cheesecake, similar to an American baked cheesecake, but without a crust

    A double batch of ‘Rocking Rock Cakes’ - only get 8 from a batch :( They are absolutely scrummy :drool:

    Yummy! I was thinking of making rock buns with orange and dried apricots but would like to give these a try. Recipe please?

    Makes 8: Pre-heat oven 200C/Gas Mark 6 Line a baking tray with baking parchment or greaseproof paper

    225g SR Flour; 100g cold butter, cubed; 75g Caster Sugar; + extra for dredging; 100g Mixed Dried Fruit; 1 medium egg; 1 tblsp milk

    1. Sift Flour into a mixing bowl (I never sift :rotfl:) add butter & rub in until resembles fine breadcrumbs.
    2. Stir in caster sugar & dried fruit & mix well.
    3. Whisk egg & milk together, then add to bowl.
    4. Stir with a wooden spoon until the mixture comes together in a firmish clump.
    5. Drop/place rough spoonfuls on tray - spaced well apart
    6. Bake in centre of oven for 12-15 minutes until risen & pale golden brown
    7. When baked, Dredge generously with caster sugar
    Can be eaten warm or cold :D

  • I currently have a boiled fruit cake in the oven. Strange recipe, uses sweetened condensed milk instead of sugar.


    I would class this as experimental (though reported to be good and moist), hence no details posted. If it's nice, I'll let you know.

    PS - The cake actually does taste very good, but it's very dense. I think that there's too much liquid in it? Even though the skewer came out clean, it could have done with longer in the oven in my opinion. Oh well, next time.....
