Leaving chicken out all day to defrost?

    Way back when I worked in catering, we were told that the safest way to defrost meat quickly was in a bowl of cool water, as it will warm up evenly without getting too hot. It wasn't advised to defrost it under the tap as the splashes of water would spread any contamination. I have no idea if that's still the correct advice though.
