AC - flight delayed in Lima

We were due to fly out of Lima on 10/5/18 at 01:30am on Air Canada (the flight was to Toronto and then onto London). We boarded the plane and sat waiting to take off but nothing happened. The capt announnced that there was a mechanical fault and they were working hard to fix it; the earliest we could leave was 5am if fault was fixed. In fact we were kept on board without any food/refreshments but just water until 5am when they finally decided that they needed a part which was not available.
They whisked us off the plane and into the airport and then onto coaches to a hotel in downtown Lima taking around 2hrs. We were given buffet breakfast and lunch at the hotel. Then at 6pm coaches came to pick us up and took us back to the airport. There we were checked in but not offered a meal. When we asked they gave us food vouchers to use within the airport. When we tried to cash in the vouchers we were offered one slice of pizza, a drink and a piece of bread. We refused this and bought our own food.
Eventually the flight took off at 11:30pm and we got on our way.
Are we entitled to any compensation bearing in mind that the flight was outside EU? We feel particularly aggrieved at being kep in the plane for over 4 hrs without refreshments before they declared the plane unfit and for giving us a food vouchers which were pretty much worthless.
