    I had a pitta bread which I toasted at work, filled with lettuce, a bit of yellow label rocket (which I've eked out all week even though it looks a bit sorry for itself now, but still tastes the same), home made humous, a couple of slices of beetroot and a bit of avocado and a couple of chopped up olives - took the filling in in a plastic pot. Totally delicious!
  • Had Monday and Tuesday off work as leave, so that messes up my target hey ho. Wednesday I bought a salad from T3sco as it turned out I was out and about all day and had to eat in the car. Thursday was tomatoes on toast and Friday was noodles. So Wednesday is my only bought lunch so far this month.

    Continuing with a clean sheet - Have batch prepped Chicken n Bacon pasta salad and chilli con carne for this week.

    Today is pasta salad :D

  • Had some very bad news at the weekend and would normally turn to junk/takeaway food, so attempting to strike healthy balance whilst still giving myself some TLC and stick to the challenge so lunch this week is a bit extravagant. Smashed avocado with smoked salmon on two riveta :o

  • Sorry to hear that Soundgirlrocks, lunch sounds lovely though!

    I am on 9/10 with a couscous, mozzarella and sundried tomato salad and some fruit :)

    As I mentioned it on the "Great British Sandwich Week" thread, I got tempted to make "special cheese" today.


    Grated extra mature + carrot + mayo on granary with lettuce.
    And everyone in the office was going up Peel yesterday for their smoothies and veg pots, so I made my own version of their "chocolate protein pot" for my brekkie:


    40g oats + 100g low fat Greek Yoghurt +3 strawberries chopped + 1tsp cocoa powder + 1 tsp chia seeds.


    So, instead of £2.50, that works out as something like 42p. :)

  • Half marks today, had an early meeting at work so managed to make a sandwich but bought a salad to go with it (yellow stickered but still not from home!)
    So sticking on 9/10.

    15/19 - doing well. Today mushroom and tomato pasta.



    Made my pasta so lazily. weighed it, put it in a pan, added cold water, brought to boil, switched off, went to bed.
    In the morning... really huge pasta.


    So, not the best... but it saved time.
