What version of Android did you have before and what do you have now, and what phone?
Bear in mind a lot of providers like to skin/customise their phones (sometimes dramatically) before they get pushed out to manufacture so it may be a lot of what you saw previously bore little resemblance to how Android can look in its raw/stock form (the Nexus range gets dibs on Android upgrades and tends to be stock Android).0 -

Xperia Z (android 5) prior (5yrs old) now XZ2 android 8, what I mean is that recipient X colour of text is different to recipient Y, and lots of colours and shades used.0 -
It has been like that in the Messages app for ages. I suppose it is to help you easily differentiate between different recipients. Just use a different messaging app if it bothers you.

Open a conversation, tap the three dots button at the top right, choose People & Options.
At the bottom is a list of people in the conversation with an artist's palette icon next to the name. Tap that to select a colour.0
