You cannot do a single thing about the double NAT. You cannot do anything about the mobile network NAT as that is done by their hardware on their side of the connection so no matter what you do you're hampered by the mobile phone network's way of operating so even though you don't run NAT on your own network you still have the same issue because of the mobile network. At any time of day or night the IP address assigned to your mobile phone, 4G router, dongle etc will be also assigned to hundreds if not thousands of other users as well.

I worked at a software developer and we had installations where there was dodgy landline broadband where we tried 3G/4G so we could SSH into servers in order to do maintenance and updates. We spend a couple of months on the issue and were not able to resolve it.

Note this applies to ALL mobile networks, not just Three. It is a limitation of mobile broadband they need to make people aware of.

Tarambor, than you for the update and saving me hours if not days trying to resolve the issue.

The xbox's still seem to work with a strict NAT as UPnP does not seem to be working correctly since stopping the service and restarting, the only main issue is that i cant stream music through alexa's but can stream TV/Movies so think I can live with it as it is, as the speeds are 4/5 times more than the traditional fibre broadband, less than 1.0 upload.

If you can stream TV/movies through Alexa you should be able to stream music. There is nothing that would be affected by NAT for this.
