After leaving a restaurant my husband and I realised we'd been undercharged as the waitress had forgotten to add some beers. We went back the next day and paid as I was worried the waitress would get in trouble. When I was a student I worked in a bar (18 years ago!) and a table of four customers left without paying for their drinks/meal (it was Christmas and extremely busy so not noticed until later). Each of the waitresses had their wages docked to cover the cost of the table's Christmas meal, something I would never want someone else to have happen to them.
    This is something else entirely.
    It's despicable and dishonest.

I've never understood how anyone can do that. Even when we'd requested a bill 4 times without any sign of actually getting it, and had been at the table for best part of an hour after finishing our meal, we still worked out roughly what we thought it would come to and left the money on the table before walking out.

Just the same as those who fill their car with petrol in the garage and do a runner.

If you have something you pay for it otherwise you are no better than a common thief , however I do have sympathy for those who try and do the right thing and service staff fail miserably to attend to customers. I am reminded of a group of us time in a restaurant that wasn't busy and the staff weren't even in the room so ordering drinks etc took forever. When after 20 mins no-one wanted to take our money some of the group wanted to leave to teach them a lesson.

Or even worse - you point out a mistake in the restaurant's favour and it is dealt with with bad grace.
This happened to us in a Greek taverna, locally owned.
We pointed out that they'd under charged us - for half litre of wine not 1 litre - the waitress just shrugged and took the bill away for amendment. We said 'Bye' and 'Thanks' on the way out but had no response from the staff.

The owner was - quite rarely - not there that evening and it showed.
