Most supermarkets should have it, although a lot of what's on the shelf will be "dried Italian hard cheese" which doesn't even need to be refrigerated - it's the Sunny D of the cheese world! Far more economical to buy a block of it from Lidl or Aldi and grate it as you need it (use the fine side of the grater). I find this lasts a long time and you get a lot more for your money.0 -
You can freeze it too, either grated or in a piece - maybe if you froze it grated you could just sprinkle it onto hot food - I think it would be much tastier than the stuff in a tub.
I always freeze a chunk of Parmesan, cut off what I want (with a SHARP knife) and put it in my drum grater, I have no problems with it being still frozen and by the time it gets eaten, it's defrosted. Yum.0 -
I prefer pecorino (not as acidic as parmesan) but find most hard cheeses do tend to work in recipes although the taste and consitency will vary a bit. The stuff should keep for ages in the fridge though as others have said, it does freeze."Who throws a shoe, honestly?"
