i'm making a pasta recipe which needs me to use parmesan cheese as part of the sauce.
Would grated 'normal' cheese do the same job just as well ?

I would have thought so but parmesan has a distinctive stronger flavour.0

Give it a go, if it doesn't work you know not to do it again
Cooking is all about trial and error isn't it0 -
Parmesan does have a different texture too - for example you couldn't make cheese on toast with Parmesan. The end result will def not be the same if you use normal cheese, but may be just as nice. A little tip when using normal cheese - adding a little english mustard really enhances the cheese flavour to the effect of almost using double what you actually have.BCSC Member 70:j

It won't taste the same so if you want to score top marks go and buy some parmesan (get a lump, not the sawdust in little drums!).
On the other hand it will be OK with a strongish cheddar, it'll taste fine but just not quite what it was supposed to taste like!0 -
Sorry, just seen you're going to use Red Leicester, and it's for lunch today! I'm sure it will be great (grate?)!0

Yes, any old extra strong/mature/crawled into a corner of the 'fridge on its own cheese should do.
The Red Leicester should be fine, if a bit on the mild side, but this and the odd colour should be lost in the sauce.
Actually, Italians tend to prefer peccorino to parmesan. The acquisition of wealth is no longer the driving force in my life.0
