Help - Stewing Steak!

Hi,

Hubby decided to help me and brown off some stewing steak for me. My plan was to season it with flour first but he got there first so it's been browned but nothing else added. I've got a well stocked cupboard and a slow cooker so looking for ideas to use.

    Chuck in some chunky veg for a trditional stew, + top up with boiling water you can thicken the gravy when you're ready to eat,
    Or some peppers and tin of toms and paprika and water = goulash ish

    In the slow cooker for at least 8 Hrs.
    I used to be indecisive but now I am not sure.

    Girl forget about that flour stuff. If you need it you can thicken up a bit the end. OH is absolutely right. Cube the meat roughly & then fry off in smallish batches until its really brown in frying pan,this carmelises the meat & gives it flavour & a good colour. As you cook put the browned bits into a big pot Chop up some onions & carrots pretty bit - ss takes long slow cooking & if you chop too small is kind of disappears. Oh yes & the peel of a washed orange peeled fine & chopped.Fry the meat, fry the veg & orange in the same pan. Squeeze the orange juice & a taste of water in to the frying pan bring to the boil & pour over the meat/ veg mix in the pot. Add enough water nearly cover the meat & some salt n pepper. Then on a really slow heat until tender say 2 hr with a bit of thyme & you couldn't get better !! Enjoy
  • After browning the meat I stir in a tablespoon of flour so that it coats the meat and soaks up the juices ( may look a bit yucky at this stage) then add stock/tinned toms/beer/whatever. This saves having to thicken it later.

    I never thicken, I just add less liquid in the first place!;)

  • Oops, just realised someone posted quite a similar thread to me. Mine's below. I didn't brown the meat (it was 6am, at that time in the morning, it was lucky it got cubed!). Will this matter? Will I still have a nice stew? I didn't add any veg as I only have frozen was just going to cook this on the hob when I got in.

    Stewing Steak in Slow Cooker


    I was a bit stuck as to what to cook with this as I didn't have a recipe.

    I bunged all the steak in the slow cooker and put some herbs, salt, pepper, an oxo cube and a tsp of gravy granules in as well. Stirred it for a bit. Added a tiny bit of water and turned it on.

    Is this likely to turn into anything nice?

    Is all the meat going to go to mush? I have it on low and it will be on for about 10-12 hours. Is that way too long for cubed meat (this is how long I have it for brisket).

    Thanks for all your suggestions - I'll use them next time.

    After sulking with hubby, I made up some gravy and popped the meat in the slow cooker. Had a lovely stew tonight. Even have some left over to make a steak pie tomorrow with some mushrooms chucked in.

    I'm *trying* to make a steak pie tonight...

    The stewing steak has previously been frozen but I have defrosted it overnight and it's in the oven with onions and covered with beef stock in a lidded caserole dish...

    I want it to go really soft though and at the moment it's tough as boots... If I leave it in the oven on low all day will it get tougher or softer???

    I don't know how to help you with stewing steak, but in future if you buy shin of beef instead and cook it slowly it completely falls apart. i have tried lots of different brasing steaks, and they never seem to go as soft. Hope that helps!

    I leave mine in the slow cooker all day - which i suppose is the same as the oven on low. And it always ends up lovely and soft
