  • Lunch today will be carrot, lentil, coriander and sweet potato soup with bread. Dinner tonight is pasta with hm pesto, crispy bacon and peas. Chocolate cheesecake for pudding.

    I have just braved the elements and stocked up, only my normal shop, there were some in the shop stockpiling bread and milk - amazes me as we have had hardly any snow, yes it’s cold, but nowhere near as bad as predicted - I have enough to last the week, so I thought I would leave some on the shelves for others :)

    Dinner tonight - Lemon and herb Risotto with grilled Pesto topped salmon fillets and Fruit and Nut for pud :rotfl:

    Well we finally have snow - however I have a freezer full of food so I'm quite sure we won't starve over the next couple of days.

    Think I'll use the last of the pulled pork for lunch (better get the last brioche bun out) rather than putting that in the freezer - which seems a little pointless.

    OH has left me in charge of dinner - likely to be something easy like fish n chips (in the oven, not the chippie)

  • German Lentil, Bacon and Sausage Soup

    1 leek, cleaned and chopped
    1 onion chopped
    1 carrot chopped
    1 potato chopped
    4oz continental lentils(any kind you like)
    couple of handfuls of cooking bacon chopped
    jar of frankfurters/hot dog sausages, chopped
    1.8 litres ham stock (or chicken)
    2 bay leaves
    dried parsley
    garlic granules,
    nutmeg
    onion granules if you feel they need adding
    lots of black pepper
    celery salt to taste
    salt if needed
    1 heaped tablespoon of flour to thicken

    Little oil/fry light in a heavy based pan and add the bacon a fry until it puts out fat, add onion, carrot, potato and sweat for 10 minutes then add in all other ingredients except the flour and simmer until the lentils are cooked and soft. Slake the flour with water and add to the soup to thicken, cook for 10 or so minutes and adjust seasoning to your taste.

    Hope you like it if you decide to give it a go! The herbs and spices are in at the level you prefer for your taste so no quantities given xxx.

    Ooh, that looks a lovely recipe Mrs LW - very warming and filling. I have all those ingredients at home too, so I shall be making that if we get snowed in (as the forecast suggests) tomorrow.

    Tonight we will be having the last of the home made spinach and ricotta cannelloni I made the other day, followed by some apple strudel and custard for pud if wanted.

    Just saved that recipe Mrs LW, looks scummy and something Mr Suki would eat

    Power is off and on today and I ran out of heating oil so its a tad cold in the kitchen at the moment so really don't want to go in there yet

    Think it will be sausages and bubble once I get moving

    Ive also a hankering to make a macaroni cheese for my lunch box tomorrow. Its so cold in work, no heating, that a sandwich just doesn't hit the spot
