Back to normal cooking after a gorgeous three course meal last night.
OH is having some Mexican rice concoction and I had sweet n sour with HM egg fried rice. Two portions of rice LO too. Think tomorrow is chicken curry which I accidentally defrosted thinking it was a ragu which I'd planned to turn into a lasagne. Whoops!Feb 2015 NSD Challenge 8/12JAN NSD 11/16

Local pub has a special deal on food this month, so we're going for a roast Sunday lunch today. Will probably only need a sandwich for dinner tonight. Back to cooking tomorrow.0

We've just had healthy 'Brunch' , toast, oil spray mushrooms and tomatoes, baked beans and scrambled egg with out butter etc. in the microwave and HWK had some ham too.
Supper this evening will be some melting middle fish cakes with mushy peas and a crispy iceberg (YS) based salad, very yummy!0 -
Made a HM Coronation Chicken sandwich with raw baby spinach for lunch from the remains of a chicken carcass and the last of some HM curry powder that needed to be used up. Will be boiling the carcass up for a chicken stock this afternoon.
Am planning on having a mushroom risotto made with the above stock for supper.
With most of what I need to use up having been used up will be glad to start getting back to my more usual cooking/eating routine next week, especially as I have some newly acquired cookbooks0 -
A great big lump of roast pork with crispy crackling, roast spuds and roast onions, cauliflower, carrots and peas
Not had pork for yonks, will be a nice change0 -
In laws coming for dinner today, who only eat a few veg, but must not be undercooked, daughter doing veganuary. Not an easy combination.
So it will be gammon, roast potatoes, parsnips, carrots,cauliflower cheese, green beans, cabbage, mushy peas, vegan mushroom pie, stuffing. Gravy.0 -

Doing the first proper roast since the Christmas turkey! So have a small joint of pork,roast potatoes and parsnips, little new potatoes, sprouts,carrots and kale with homemade apple sauce from some windfalls and lots of gravy. Just two of us to feed and never any waste in this house, the left over pork will be used up with egg,chips and homemade chutney tomorrow0

Stir fry of quorn pieces, peppers, mushrooms, onions and green beans in a yellow bean and chilli sauce.0
