I'm still worried about the paypal aspect though and as per an earlier question , no, a bill of sale won't do for paypal as it isn't the sale that they are concerned with it is the delivery. As stated earlier paypal's terms for proving delivery are very narrow, I would link to the correct page but I can't get into paypal at the moment. Add a note that you can't accept paypal unless the buyer is prepared to arrange online trackable delivery. If you are really pressurised the only thing I can suggest is:
Get a signed receipt for the car, photocopy it and post the photocopy to the buyer using recorded delivery.
Only way I can think of for trying to satisfy the paypal rules on signed for delivery. Paypal are such a pain, but they don't read any complaints, so a recorded delivery number in the box may be enough to satisfy them that delivery followed their rules.
