There is a cost to import goods from outside the EU. The OP knew that and if the invoice had arrived not long after the delivery this thread wouldn't even exist!
If you don't want to pay duties and taxes on things, don't import them! If you don't want the delivery company to process the item through customs, arrange your own process!
Those costs are part of buying something and it's not hard to work out what those costs would be. With the poor exchange rates these days, it's hardly ever worth buying from outside the EU unless it's a rare or difficult item to get hold of.
In the OP case, they could decide not to pay but then FedEx could decide to not deliver anything to their address ever again.0
