Just made HM pizza and for the first time in about 5 attempts - no soggy bottom :j0 -
I pop my base in the oven for a few mins (anything from 5 to 15) which firms it up a bit - sometimes I add the sauce, bung it in for a few mins before finally adding the topping. That way the base has time to cook a bit, the sauce can reduce a bit and there's still enough time to put the "real" toppings on and the cheese to melt.0

I make this by heating up tinned toms and then spreading (while still hot) on the bases.
I want to freeze or refridgerate the pizzas after adding topping. Should I wait till toms cool down or does it not matter?

I part cook them then freeze or refridgerate. When i have put raw into fridge the base goes a bit funny - like the yeast is fermenting almost.0

If you put things in the fridge or freezer while it is still hot/warm, it upsets the temp in the fridge/freezer, so they always recommend waiting until the food has cooled down before putting it in!!!0

Now you know why other restaurants come and go but pizza chains stay forever - huge profit margins!

Okay I know it sounds mad but pizza is nice with sliced potato on top. Slice and parboil potatos, put tomato sauce on pizza, then mozzarella, then potato slices. Top with some italian herbs and a little olive oil. Very filling and very cheap.
for the tom sauce I got this from a real honest to god italian. I packet passata, 1tbsp oregano, 1tbsp olive oil, 1dsp salt. cook in saucepan until it thickens. Can be frozen so if you do a big batch and freeze in small quantities it lasts forever. Pizza dough can also be frozen in balls. Great emergency dinner for last minute guests.
Tesco and Lidl are cheapest for grated mozzarella btw.0 -

Yip when you discover HM.....I had one of those leaflet things through the door from Pizza hut saying special offer £20 odd - they must be joking!!! OH (they do have their uses) found a huge about 24" dia pizza plate in a skip....we scrubbed it & its terrific its metal, flat with holes in the bottom. Aldi do a good mozzarela for about 49p & they also do a terrific parmasean (sus spelling sorry). I make easy base - 8oz flour, 2 large spoonfulls olive oil (aldi again - you guessed), large spoon dry yeast, about 8fl oz hottish water, mix with knife, till all together, knock out, kneed for a few mins...voila.0

The flyers do have their uses - we use them to plan what to put on our HM pizzas (for inspiration)!Save the earth, it's the only planet with chocolate!0
