An airline can charge what it likes for its services and if it wants to charge more for one way than a return then it can.

Try booking New York - London one way on any of the big carriers. Quite often that’ll cost more than a return!

For those that book one way flights check your travel insurance, if you have it, some may not cover one way trips. This is from an Axa policy but i am sure others have similar provisions. Just check so that you have the cover that you expect and want.

    Trip
means any holiday, business or pleasure trip or
journey made by you within the area of travel
shown in the schedule which begins and ends in
your home area during the period of insurance,
but excluding one way trips or journeys.

That is referring to one way trips and not one way flights.

A one way trip for example would be you going to another country with no intention of returning and as such, it wouldn't be a holiday but a move of residence.
Even if you have two one way tickets or one outbound ticket and you intend getting the return at a later date and providing that the trip itself would still be starting and ending in your home country, I can see no reason why it wouldn't be covered.
