A cold slippery shuffle to the co-op, and as I passed the village green one of the trees made a big cracking noise and a huge section came off. Poor old tree, a huge yew tree.

£10.58 spent on milk, eggs (15 FR £1.89), bread, mushrooms, carrots , OJ, lentils and chocolate. Plenty of milk and bread on the shelves, but very little fresh meat.

The lentils are a ridiculous £1.39 for 500g but OH and DS1 both love the lentil loaf thing and its a useful fridge snack. Last time I added some chopped peppers and mushroom which worked well. Its a good place to hide vitamins from veg dodging DS1.

Lucky you weren't under the tree!

Do you have a recipe for the lentil loaf thing, sounds like that might be right up my street!

The plan for this evening was a mixed curry plate, doing the inevitable carrot biryani, lamb and lentil from the freezer and something chicken based. I wanted to make the hairy bikers quick chicken pilau but I haven't got any curry paste so I finally got round to trying to make some using this recipe substituting chipotle flakes for the dried chilli and adding a little garam masala to replace the fennel and mustard seeds. It was excellent and I have enough for next weeks curry base too, or if not I will freeze it. Makes a change from buying a jar to use one spoonful.

Dont think youve got enough cheese in that fridge redo ;):rotfl:

Our local stores are bare of milk, bread, potatoes, eggs etc! Dont think the deliveries have been making it into the village. Im really hoping for deliveries by the time I go shopping tomorrow! xx

Lentil loaf sounds really good redo , may try that at some point.

My gas has gone through the roof as well, plus electric much higher , but I refuse to freeze.

    Hope you are warmer today.

  • Refusing to freeze is sensible.

Morning, posting this while I remember:

The very lovely Lamewolf (a fellow flylady) has posted a thread about a free downloadable budget cookery book here: https://forums.moneysavingexpert.com/discussion/5804035

Its a good one for beginners, and describes itself as 86p per day. I used my kept for junk email address for an immediate PDF downlaod. Slightly amused at some of it (illustrations for toast and how to make packet stuffing mix anyone?) but I would have found it useful when I first started cooking.

Tomorrow we will need to make a test flan in the new tin. Must give that some thought. Also plan to roast the squashes and make some soup. I'd have less of an excuse to eat things I shouldn't if there was something nice to eat.

    Visitors today so I baked.
Coconut macaroons: 3oz sugar and one egg. Mix together till fluffy. Add in 5oz desecrated coconut. Drop teaspoons onto a greased/lined tray. 12 minutes at 180. Let them cool a little or they stick. Works well with ground almonds instead. Gluten free so useful.

    Apple and Blackberry slice
6oz plain flour, 1oz sugar, 4oz butter whizzed to breadcrumbs in the food processor. Line a small tray - mine is 18cm x 15cm. Tip two thirds of the breadcrumbs into the lined tin. Spread them out and then squash down with a fish slice to make a nice thin compacted shortbread style base. Save the other third for the crumble topping. If you haven't got enough to fill your tin use it all and make another small batch for the topping. Put the base in at 180 for 12 minutes. Let it cool.
Peel, core and chop some cooking apples (4 here as I wanted a good wodge of apple), sprinkle with sugar and lemon juice. Add nutmeg and cinnamon to the crumble topping and to the apples. Stew the apples with a spoonful of water and a knob of butter while the base cooks/cools. Taste test for sweetness and add more sugar if you think it needs it. You want stewed but holding shape apples.
Once the base has cooled spread on a layer of blackberry jam. Add the stewed apples and spread them out. Sprinkle the remains of the spiced crumble mix on top. Back into the oven for 20 minutes at 180.
Let it cool in the pan, then lift it out using the lining paper. I cut it into inch cubes as they are quite sweet.

I made these the other day as a coconut jam slice, using the base, damson jam and then the coconut macaroon mix spread on top. That worked well too, 15 minutes at 180.

Reading you diary from the beginning. Really enjoying it. These recipes sound so easy and so good. Thank you for sharing
