Good morning.
A dull, wet and windy day out today luckily I'm not planning on going out anywhere. A bit of ironing to do and tea to make which is going to be a corned beef pasty - cook potatoes, carrots & onion together in one pan and mash lazily so it's still lumpy. Stir in a tin of corned beef chopped with a couple of crumbled stock cubes. Put into the middle of ready rolled puff pastry sheets, stick the edges together then crimp and cook till golden and smelling yummy. I always make 4 from 2 sheets of pastry and freeze the extras. Served with peas and onion gravy:D
Lunch will be a sandwich of some description and the last of some leek and potato soup from the freezer. I need to make some more soups as my stash is gone now.
Had a thought re cheesecakes last night. Would it be worth buying or making one whole one then portioning it up and freezing the rest for future puddings? Provided the freezer space is available. They freeze well as they are often sold frozen to be defrosted.0 -

It depends on whether you're comfortable with your size. Because, no matter how you dress it up, talking of freezing portions, the reality is that it exists .... and so easy to grab a bit and eat it - and before you know it you've eaten the whole thing
Then you tell yourself it was a good thing to do as it cleared some space in the freezer.
Slippery slope time
Today I'm going to have a quick burger for lunch, because I have them, because they're tasty ... and I'll use the last of the chips too.
10 minutes freezer to plate, what's not to like!
I'll slice a tomato on the side of that .... make it look "healthy"
Total cost 80p inc a dollop of chutney.
EDIT: OMG that was truly lovely .... took the extra few minutes to toast the bread roll and add/melt cheese under the grill at the same time.
If I weren't full I'd fancy another of those!0 -
Breakfast today has been a banana and a slice of toast, I only had the banana because it needed using up
Lunch is a tuna mayo sandwich.
Dinner is baked cod. I've got some sweet peppers that need using up, so I'll just thinly slice them, add some herbs, and having just read PN's post I forgot that I have a couple of tomatoes going quite squishy so I'll put them in as well. Then grate some cheese over for the last 10 minutes. I'll have that with either steamed veg or salad. I can't decide which at the moment0 -

I've done "something" to my back and can't find a comfy position so have been mithering all morning. Decided to try and take my mid of it (it's niggly rather than painful) and make a bit pan of proper mash, so cottage pie will be made to use up the LO short rib meat. I'll portion up the spare mash and freeze it.
Usual toast for breakfast and I'm having boiled duck egg in a roll with tomato for lunch. Dinner will be cottage pie with runner & broad beans.0 -

Weather sunny & breezy, did a bit of tidy up gardening and put out the garden wheelie bin. That's today's exercise done
Dinner was ummming & aahhing, was possibly salad but clouds are rolling in, so freezer rummage and found a Lild super posh extra special Stroganoff pie, must have got it on offer for some Christmas past
It is a big family sized one, at least two day's meals, depending on greedy gutsy quotient. I'll have it with steamed fresh veg, including some of my runners
Give me a bit more freezer room, if this keeps on I'll have to start paying attention on Iceland Patrol. There are packs of frozen boil in bag kippers in my freezer, I like them but went off them, which is why they are in the freezer. Farway - that sounds like a cracking pie hoped it lived up to expectations.
I made a huge bowl of mash (got a bit carried away with peeling the spuds) so plenty for a cottage pie and lots for the freezer it's getting to the time of year when I like to have a stash of frozen mash to hand:).
I might just have a few brambles ripe by the weekend and a wee cherry tomato is getting there in the greenhouse. I find with both at these at first you get one or two ready at a time and then after a few weeks they all want to do it at once:eek:. I'll not have a huge bramble crop this year as I got the patch decimated when I got the garden re-done but enough for CFO. I've still some bags left from last year so they'll do nicely for the bramble vodka I make as Christmas gifts:).0 -

What about kipper pate? Easy to make and lovely on toast. I make it along these lines with any oily smoked fish http://www.deliaonline.com/recipes/international/european/british/kipper-pate though add a wee bit cream cheese or creme fraiche if I have any and don't tend to bother with the parsley and nutmeg just lots of coarse black pepper (a splash of tabasco is good):)0 -
Dinner coming up in a minute - its been preceded by a banana with some yogurt and then some cherries. Its going to be various roasted vegetables/using up last bit of canned potatoes ever/tomatoes/some vegan "cheese" sauce left over from a tryout yesterday (which won't be repeated).
Lunch was eaten out - so basically salad/fermented vegetables/couscous with vegetables in/slaw.
Yep...you can detect a theme - vegetables, vegetables and more vegetables...:rotfl:
Well I think it's still working - judging by the looks when I emerged in summat skintight clothing wise the other day - whilst I was still busily hating a residual roll of fat around the middle. 2010s clothes size 12 here I come....then 2010s size 10.0
