Cooking for one (Mark Two)

    Utterly stuffed due to a serious bout of over-eating.
    2+ mile walk.
    Fireworks and a bonfire were observed.
    Back home now .... with leftovers in the fridge.

    I am going to make a thumping good casserole today for ready meals. Chopped turkey breasts, diced smoked lardons and a last piece of belly pork. I will be browning the turkey in a little oil and removing, then the finely chopped belly pork, then the lardons. I don`t want too much smoked flavour so will be wiping the casserole before continuing with the veg, Sweet potato, carrots, onions, swede. I just need to add herbs to that and a tin or two of cannellini beans. That is the last of the lardons and belly pork and I see a fair bit of space in the meat/fish drawer at last. Won`t be re-filling until I know what the house situation will be in a few months. I can see this casserole lasting six weeks at one a week

    Other veg and fruit basics today, mixed berries, baked apple and a bowl of chard/fennel/purple sprouting. Kiwi and grapefruit at some point. I may well do a mixed fruit bowl with some nuts and creamy yoghurt for my last meal. I have plenty of the likes of hm bottled gooseberries to add to that

    I want to be outside for a while today, cycling is my preference, love it and went past a family of swans yesterday, no cars, just open nature and wind

    No cooking of a main meal today because I'm being taken out for lunch.

    I've got a lot of eggs again at the moment, I think I must have bought two lots not realising that I already had a box of 12, so I had a couple of scrambled eggs for breakfast and will probably use them up for lunch next week.

    If I want anything for tea today I'll just have some toast or crumpets later.
  • I used to be given pease pudding sandwiches when I was in digs in newcastle, I hated them but ate them because that was the way I was brought up

    I am neck deep in cooking this morning and enjoying it, plus the archers are on soon :). RM casserole is in process and I have taken lots of blackcurrants and rhubarb out to simmer gently for RM crumbles. Just got to finish casserole prep then will batch make crumble, adding ground oatmeal as I have a fair bit to use up. I also took a washing up bowl full of frozen bits out of the small freezer, real progress going on today :D

    Morning all.
    I find sesame oil adds a Chinese flavour to stir fry.

    Yesterday was work , after usual 2 toast brekkie , took ham salad thin for lunch followed by spiced plum muller corner .fitted in a couple of satsumas too. Worn out when I got home with bags of shopping I picked up, so had 2 fish fingers and a potato rosti on pitta, with cheese ,tom sauce, and garlic mayo. Plus a glutenfree "kit kat "

    Today started with toast. Made bacon sausage and boiled egg for dgson. We will have ham salad sandwich at lunch with yogurt. I got a yeo valley one with greengage and ginger, that I'll put seeds in.
    Dinner will be roast chicken with broccoli and carrots, I may have dauphinoise potatoes with mine. Then if the pineapple I bought is ripe enough well have that, meringue nest with kiwi and passion fruits.
    Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.

    Can anyone help me?
    I have in the freezer a turkey crown I bought after Christmas last year !!! Due to the circumstances around my husbands death, I didn't get round to using it.
    Does anyone know if it will be ok to use this Christmas? ??

    Yes that's basically it - you can slice it when cold. I thought with some added stock, veg and bacon it would make a good rib sticking soup.

    I don't mind it in a sandwich (or ideally big wodge of stottie cake :D) but these tubs have been there a while so want them used. :)

    Wort - if it has been well wrapped your turkey crown should be absolutely fine.

    After yesterday's torrential rain, it's a beautiful though very cold morning. It's a shame the local Round Table firework display isn't on tonight instead of last night.
    I've taken a portion of roast chicken and gravy out of the freezer so it's that root veg mash (I'll make a new batch later as I've used up the freezer stash), sprouts and stuffing tonight. The temperature is due to have dropped to 3C by the evening so that will be a good warming meal. I hope to get a good bit done in the garden this afternoon as it's supposed to be wet and windy again from tomorrow. As usual on a Sunday I'm going for a cooked brunch. Swithering between bacon and tattie scone or lorne and eggs.
  • I would use it wort, long slow cooking in foil for moisture. Should be lovely
    I`m on target and the sun is out, just 5 more minutes and the pressure cooked swede and carrot will be ready to mash, I killed lots of birds with one stone this morning as in `used up`. 3 small celeriacs in the casserole and its on the stove top, I`ll put the timer on to switch it off, just in case while I am out. I am topping the RMs with mashed buttery swede and carrot, love that stuff. Crumble is half ground oatmeal and is prepared. The timer has gone off and I am raring to get out on my bike
  • Baked beans, tomatoes and mushrooms with toast.

    Cup of coffee. I'm trying coffee again as I like the taste and the caffeine boost, but I sometimes have had a nasty reaction to it. I seem okay with one cup a day so far...

    I'm making lots of lovely veggies for lunch with onion gravy and Linda McCartney sausages.:)
