  • Having said that .... I did have to chop an onion, so I had to have an onion, which meant I had bought 1Kg, which means I now have 965 grams of onions still to eat :)

    Hi Folks,

    Oh dear, I have so much fruit and veg to get through, I'm battling between using things up, sticking to the menu plan and finding freezer space for anything else that I cook.

    Yesterday I used some in a veggie shepherds pie, ate one portion and froze three. I now have a large bowl of shredded and grated veg in the fridge to use raw or as coleslaw. My two baking potatoes were starting to take on a slight green tinge so cooked up some wedges most of which will go into the freezer.

    Used up half a banana, leftover from yesterday, on toast for breakfast this morning, rather than freeze them I had onion bhajis with some of the shredded veg for lunch and I'm having chilli from the freezer, some of the wedges and more shredded veg for tea.

    So that leaves in order of priority to be used up 1 ripe banana, 3 ripe pears, 1 large pak choi, 2 leeks, half a head of broccoli, small celeriac :eek: wish me luck.
    Jan - June Grocery spends = £531.61
    July - Grocery spends = £119.54
    Aug - Grocery spends = £42.19

    New way of stewing my apples (of which I currently have a surplus) going on at present. A blogger said about just chopping them roughly into large chunks and plonking them straight into a slowcooker and scattering some cinnamon over the top (my translation of that being = get out nutmeg grater and grate a bit of cinnamon stick over the top). 4/5 hours on high = sorted. That's it - as simple as that - except for giving it a stir half way through.Can add some raisins if I wish.

    Well that's got to be easier (and, presumably, using less electric to cook than whacked into a saucepan on a hotplate) - so that's cooking up currently. Choice of fruit to have with my porridge tomorrow being last of a packet of frozen cherries, or the stewed apple, or some frozen strawberries from my garden that are quietly defrosting in the fridge.

    Still thinking - "Thank goodness I'm eating healthily again - courtesy of being back home".

    Today's dinner currently cooking - using up a last piece of fish (red snapper) I found in my freezer and that will be all the fish in the kitchen gone for good. It's being baked in some sorrel from my garden and will be accompanied by some spicy potato wedges and some baby spinach with tahini dressing over it. Followed by large chunk of honeydew melon.

    Good evening everyone,
    Seems to be soup weather and of course for once I've none made (well apart from a rather ancient portion of lentil that's well and truly welded itself to the freezer bars so I'm not counting it:o)
    Got completely "drookit" (soaked) soaked coming back from the GPs so something easy is definitely on the cards for later, will freezer rake in a bit. Breakfast was the usual toast & fruit and lunch a tongue and tomato sarnie:).

    I stew my surplus apples on the hob, but I am gas so only takes about 20 minutes max. No idea of cost but apples were free from garden

    However I have now gone onto roughly chopping a couple in a bowl and nuking them until looking OK for me. I don't add anything, except yoghurt when ready to eat

    The Iceland ready frozen chicken korma was very nice, chunks of chicken I did not have to hunt for. The sauce was possibly a bit sweeter than I am used to, but no expert on korma so don't take my word for it

    I emptied it out over the Actifried chips. It was all yummy and easy

    Certainly will buy again, at £1.59, may now try some of the others in the range.

    I have just put 50g bowl of jumbo oats to soak, I sort of fancy porridge, and read toady good for cholesterol, which I think I already knew but had forgotten

    A bit of that lot could be stored imo if need be.

    The banana - once to right degree of ripeness (ie pretty brown) can have skin taken off it, chopped into 4, put into bag in freezer and brought out later to make nice-cream with. The leeks = leek and potato soup (with extra portions put in freezer). The broccoli could be a cheesy broccoli bake (ie steam the broccoli and then cover with cheese sauce and breadcrumbs and bake in oven - with a few slices of tomato on it).

    Celeriac - don't know on that one - as it's not a vegetable I eat.

    This is exactly what I do with apples at this time of the year, but I add sultanas rather than raisins and have it with Greek yoghurt or porridge for breakfast. I love the apples and cinnanon combination but never fancy it during the summer. I'm pleased you mentioned this, I think I will prepare some tomorrow to make a change from berries.

    Just cooked a load of apples we had been give in the Pressure cooker.

    Had tried slow cooking them but it would have taken forever.
    I used to be indecisive but now I am not sure.

    *sighs* .... or, you could do the same, but toss it into the nuker and blitz/stir for about 10 minutes until you get the same result.

    :)

    Unless it's volume & dish sizes preventing you .... it's quicker.
  • I shall have to think of other dead-easy things I've been overlooking doing in the slowcooker.

    Hummus I had at lunchtime was a different recipe and also dead easy/quick. Drained can of chickpeas/juice of a lemon/salt/pepper/teeny bit of water/tablespoon of sesame seeds and plonked in my Vitamix blender and blitzed. Sorted. Done and dusted.

    Currently having a bit of a phase of trying to find incredibly quick/easy recipes to do.

    Dinner finished and glass of rice milk being consumed. Stomach full and veins starting to get Vitamin C running round them again - whew:rotfl:

    Some people might panic at the sight of loads of fresh fruit and veggies, some nuts and seeds and a couple of options of different healthy grains. Me - I'll think "Lotsa options - as long as there's some decent things to flavour it with - including my tahini and some decent salt".

    My trip away meant contemplating things like readymade lasagne, pizza, etc, frozen vegetables, frozen chips, sliced bread and wondering if I could find anything to eat at all....as it's so different to my own way of eating it could be on a different planet. Cue for spending lotsa money on eating out....

    Boy - I've never been so relieved in my life to see my own kitchen again:rotfl:
