I can leave her for two/three hours at a time though so it may be that I can work sixteen hours a week (which I understand I can while on Carers Allowance) if I can find something.

The Carer's Allowance rule is that you are allowed to work but must not earn more than £116 a week after tax, national insurance contributions and half of any pension contributions you make have been deducted. Not quite the same as a 16 hours rule.
