Buying a used vehicle, Private seller?

I've seen a bike that I am interested in and it's ready to ride away, 12months mot and the full works all good.
How would it work regarding tax and insurance? I can get a quote for insurance and purchase the day I pick it up but what about tax? How would all this work with the v5 which obviously takes time to update.
I have sold a bike before but the new owner didn't ride it untill the recieved the new v5.
Any help to help make this clearer?

    Same with the tax, once you have the slip from the V5 all you need do is wait for new V5 to arrive.

    So I can buy the tax and insurance on the day using my phone when I pick up the bike?
    And having that slip allows me to do that.
    Cheers sorry for the noobie questions I havn't bought used from private before.

    If the seller completes the sale online, you'll be able to tax immediately using the document reference number from the green slip he gives you. If he doesn't, the online system won't let you use that reference to tax the bike. Not a big deal, but it avoids the potential hassle of being stopped by the boys in blue on your way home and having to explain...

    If he doesn't do it online it'll still be showing a taxed.

    Even if he doesn't do the keeper change online, you can still use the V5C/2 green slip reference number to tax online or on the phone. Done it numerous times.

    My mistake possibly, but last time I tried, I had a message telling me that I couldn't tax online as the previous keeper hadn't notified the DVLA of the sale. This may be because it's only possible to use the green slip if the vehicle is currently declared SORN..

    It does not matter whether whether the seller posts the V5C or does it online.

    The new keeper slip (green), you use the reference number from that and keep it.
