    I just tend to stir-fry everything, with olive oil. Sometimes I'll roast some veg, then add them to the stir-fry at the end.

    Sometimes I'll add a couple of spoons of a Sacla pasta sauce/pesto to the stir-fry, or some veggie gravy, or grate some cheese over the top.

    If I have any salad veg, I'll serve the stir-fry on top of the salad veg.
    (I just lurve spiders!)

    I don't really use veggie cookbooks Doozer. However if you like Buddha bowls and are looking for quick and easy alternatives, you might like veggie skillet meals.

    There's a cafe near me that does the most delicious skillet, and there are lots of recipe ideas online. I don't really like oily veggie foods and skillets are a great alternative to oven roasting and very easy to do.

    I've stopped using olive oil for frying; I have been reading that it isn't healthy heated. I now use rapeseed oil.

    never sure about hot veg on salad; don't the leaves go soggy?

    Doozergirl Have you looked at Plenty by Yotam Ottolenghi? It has some gorgeous-looking (and sounding) recipes (says she who has a copy on the shelf and has even bought Ras-el-Hanout and Sumac but hasn't actually got around to trying any :o)

    We tried a couple of things from River Cottage Veg Everyday but were underwhelmed.

    Going away today, so will enjoy catching up on the thread when we get back.

    Just got to eat it fast, but I love warm salads.

    Re. olive oil........I have been wondering about olive oil in cooking. I think it depends on the temperature the oil reaches. It might be ok for cooking, as long as it doesn't smoke, but I'm not sure.

    Also, the grade of olive oil varies, and I think the idea is to use the higher grades to drizzle on food, and the lower ones to cook with.

    I think in Mediterranean countries they use olive oil for everything.

    However, it would be good to be enlightened.

    I see the logic behind the olive oil thing, and I wouldn't use it in a deep-fat fryer.

    I'll look into it a bit more, but I just keep thinking of all those generations of Italians who cook everything in it.

    Exactly. But then Italians are Italian, is it eating olives and their general diet, or is it just actually being Italian that gives them a longer life?
    Warmer climate, less stressful lifestyle?
    Nobody really seems to know.

    Seems to be a link between extra Virgin oil when heated and the nasties. The ordinary oil's not so bad. . .

    The Portuguese side of the family have longevity. A few centenarians. Doozer's grandmother made 102, his mum is a younger sibling and a few of the others are still going strong nearing the big one.

    The in laws are both about to hit 80 and are in good nick! Very lively, racing around and swearing. :rotfl:

    Olive oil, fish, no processed rubbish. Bacon does feature quite heavily.
