    Not brocolli, but crab dip - yummy:

    Baked crab dip with cream cheese and spring onions.

    Mix together: 8 oz cream cheese, 1 tin (6 oz) crab meat (well-drained), 2 tablespoons finely chopped spring onions (save the greens for garnish), approx. 1/2 teaspoon salt, good grinding of black pepper, 1/4 - 1/2 teaspoon Worcester sauce.

    Pop into oven-proof dish and bake at medium oven (180 C / 375 F) for about 15-20 min. Before dipping in, sprinkle top with paprika and garnish with spring onion greens.

  • Spinach dip - 1 packet frozen spinach, defrosted , squeezed dry and chopped. stir into 1 packet creamcheese, 1 container (287ml) of yogurt/soured cream, lemon juice, salt and pepper, chopped fresh parsley, and if you want some crunch, finely chopped water chestnuts - or you can bung this all into a food processor and it will chop the spinach and waterchestnuts for you. Good served in a round loaf of bread, with the chunks to dip in and tons of veg.

    Hiya

    A couple of people have asked me for the Hot Broccoli dip recipe, so here it is:

    Ingredients:
    350g broccoli florets, chopped (I put mine in the food processor)
    1 small onion, chopped (FP again)
    1 red pepper, seeded & chopped (FP)
    55g parmesan cheese, grated
    2 cloves garlic, pressed
    225g cheddar cheese, grated
    8 tbspns half fat creme fraiche
    8 tbspns low fat mayonnaise
    Freshly ground pepper

    Method:
    1. Preheat oven to 190 oc
    2. Chuck in all ingredients but only 4 tbspns of the parmesan (keep the rest for sprinkling once cooked), and mix well
    3. Put in oven for 25-30 mins or until heated through
    4. Remove from oven and sprinkle remaining parmesan
    5. Munch with Pitta chips :)

    Ooh, this is making me feel hungry. :o

    To make the pitta chips (optional, but IMHO absolutely essential), cut wholemeal pitta bread into large triangles, lay them on a baking tray and cook for 8-10 mins on 200 oc.

    This is absolutely delicious! I tried it at a party I went to and have never looked back - I make it loads as I love cheese and garlic.

    Can I recommend spicy bean dip - its really easy. Tin of refried beans, chopped red onion, few jalapenos chopped up, tbsp of fajita spice mix, coriander and juice of a lime - its lovely.
