Get ready for a claim, like everyone else does. It'll happen anyway and the reply you sent wasn't designed to stop it.
All court procedures and how to defend, are already covered in post #2 of the NEWBIES thread.
If you want, you could reply pointing out they haven't bothered to furnish you with the contract (the sign) and repeating some of the stuff you said before. You could add that they are misleading consumers by saying that the POFA Schedule 4 'requires' a keeper to name the driver (in fact, the opposite is true and in 2011 early 2012 during the reading of the POFA Bill, Parliament decided unanimously against giving parking firms that power).
Nothing you say will stop the claim, only then will you be able to defend it meaningfully.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

So does this mean they will most likely take me to court?0 -
They always were going to...this will be resolved in court. That is NOT a reason to pay them £160.
I've added something you could reply with if you want. Nothing will stop the claim though, that's when it will be ended.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

Time to gird your loins and blow them into the dust!
Go for it.Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.
