Try harder.
My wifes S4 mini. has email, the phone and text and a call recorder.
Homescreen has a single mostly empty screen. And the apps = a single page also.

Tried, you can't get rid of all of it, even stuff I never use.
Although you can't uninstall a lot of the apps (such as Instagram), you should be able to disable them which effectively gets them out of the way. You can also replace the Touchwiz launcher by simply installing a new app which you don't need root for if you want a more vanilla look and feel. I have a Samsung Galaxy Note 4 and have disabled all the stuff I don't use and installed Nova Launcher in place of Touchwiz.
If I was buying a new budget Android phone it would be a Moto G series as they have a good reputation for decent performance and hardware for the pruce.

Thanks John, I'll have a look at Nova Launcher but even doing that unfortunately won't help with a better camera or faster processor, which is really what I'd like.0 -
When my Galaxy S2 finally became unreliable I bought an S6 Edge which I shall keep as long as it continues to work.
Great phone, however, a friend has just got the Huawei P9 lite and it's a really good phone and I'd have no hesitation replacing the S6 with one should the need arise.One by one the penguins are slowly stealing my sanity.0
