I was thinking of having it at the weekend and usually slow roast it but was wondering how others do theirs, I quite fancy doing it in a barbeque sauce, would that work do you think ?
Looking for inspiration I guess.

I do mine as Chinese twice cooked pork belly
I use a Ken home recipe that's not online but there are plenty out there to choose from. It means a small amount of very cheap meat gets stretched for miles0 -
I tend to do it as slices in the slow cooker. We had it this week with a BBQ type sauce. I allow plenty of time to be able to draw off most of the juices/sauce and chill so the fat solidifies on the top and can be removed easily. Then I put the fat reduced sauce back in.

Hugh Fearnley Whittingstall's Roast Thick End of Belly Pork with Coriander and Fennel is so good, so easy and so tasty, hot or cold. The crackling is amazing.
